HEE-go

One of my favorite things LC is doing these days is saying "Here you go..." when she gives you something and "Thank you" when you give it back. We have made a game of asking her for things (hoping it will help her to understanding "sharing" is actually ok) and giving them back to her. When we hand her something, we always say, "Here you go..." and she has started saying it but it sounds like "HEE-go". When we give it back, she says "Thank you..." but it sounds like "Tatt-too". Kills me.

I laugh every time she walks up to one of the dogs sleeping in their beds and throws a ball at them and says, "HEE-go." When they just lay there, she will pick the ball back up and say, "Tatt-too" like they gave it back. Not gonna lie and say it doesn't make my heart hurt at the sweetness of it.
 
With relation to my "resolves", here I am drinking coffee again this morning but I'm still hoping for that 6 pack I mentioned yesterday to miraculously show up in 2013.  I did manage to eat really clean yesterday toward that goal...for lunch I had a "kitchen sink" salad (meaning everything I could find salad-worthy went in) and then Eggplant "Mini Pizzas" for dinner (with lots of little healthy snacks in between).  
 
If you just threw up a little when you read Eggplant, take a look...see, doesn't look so bad, right? Personally, I don't have a single use for eggplant besides this recipe.
 
 
Because I know I always love when people share easy "clean" gluten free recipes (emphasis on "easy") and because its hard to make foods like eggplant even relevant in our french fry world, I thought I would share the recipe:
 
Gluten Free Eggplant Mini Pizzas
 
Ingredients you'll need:
Eggplant sliced thick (a little thicker than the height of a pencil laying on its side)
All-Natural Pizza Sauce (we use L.E. Roselli's b/c its gluten free)
Toppings of choice (if you want it to be Paleo, skip the cheese...)
Place in oven on 350 for 15 minutes and then sprinkle in Cotija cheese (crumbly queso cheese)
 
For the toppings you see below, I chopped and pan roasted 8 garlic cloves in a little dash of olive oil and then sprinkled it on top of the pizza sauce.  Next, I put Boar's Head Black Forest Ham (gluten free) and then a couple fresh Basil leaves.
 
 

Notes:
I think its better if you remove the "skin" of the Eggplant with a carrot peeler before you slice and make your pizzas because its a little tough.  Otherwise, you honestly don't notice the taste of the eggplant because the garlic, basil and tomato sauce over power it.

Also, serve it hot and remember to pair it with something like a salad or some healthy side.  When you eat like this, it takes a lot more food to rack up the same amount of calories as a itty bitty burger would.  One thing my clients always say is how much food and how often they have to eat when they're sticking with "clean" foods.   True story.

I love eggplant! I never thought about making it into a pizza such a great idea! I think I'll give it a try tonight!

Do you salt and "drain" the eeggplant first or just slice and cook it? I've read up on different ways to cook it and it always seems like it takes so much time...
I agree on the clean eating. I'm trying that more too!

Hee-goes my comment: I love eggplant Parmesan! Is that something you could try? I don't know the first thing about cooking gluten-free, but basically the recipe contains sliced eggplant (duh), pasta sauce and Parmesan cheese. So good!

Thanks for posting this recipe--it looks delicious! I don't think my family and I have the discipline to go gluten free, but I still appreciate the healthy aspect of your meal. "Clean" foods sound more appealing to me now than ever before; a good detox is in order after all of the junk we ate over the holidays!

Hadley used to say "Nay-noo". She started saying "Thay-noo" last week. It's sad!!! She still says "Hee-go sissy" though. Seriously precious.
